I know people can spend weeks and weeks i’m just trying to maximize my time.

Time Out is a good way to find things that are happening in London. There's a ton of history there. I believe a lot of the museums are free. There are cool things to tour like the Tower of London, Buckingham Palace, etc. Walking tours are cool if you can find those. I did several on a school trip and learned a lot about different areas like the financial district (Canary Wharf) and parliament. Seriously, you'll never run out of things to do in London.

My strongest recommendation is to eat here: https://www.yelp.com/biz/bosphorus-kebabs-london

It's been nearly 10 years since I was there, and no one I've sent there in that span has had anything bad to say. I'm going back to London this summer and can't stop thinking about Bosphorus Kebabs. It's very near the South Kensington tube station.

You don't need that much time for Ireland. You can drive around it twice in a week. It might be fun to do the Shamrock tour which includes checking out castles, small towns, and other events. I did the Shamrock tour and a good percentage of the people were in their early 20's and it was kind of like spring break.

London can similarly be well explored in a week. If it were me I would take 2 weeks and just do all of England and Scotland, so I wouldn't have to deal with the airport as much. Scotland's country side is more dramatic than Ireland and its main city which I can not spell is as charming as Dublin.
