Once I figured it out, I confronted him and quit. Now my question is how do I address it in interviews? I can’t hardly leave it off my resume because of the amount of time I worked there. I also don’t think it would look very good if I got subpoenaed without telling anyone about it. That and if anyone actually got a hold of him who knows what he would say. Looking for advice here.

Just say you decided to explore new opportunities. If you ever got subpoenaed it would be months if not years down the road and you can explain then, there's really no need to bring it up before then, it's not like you did anything wrong.
