I know that the scores for this testing window aren’t scheduled to be released until late September, but when I go online and enter my NTS Section ID and birthdate, should it at least show the date that I took the exam? I took the exam over a week ago.

I am a CO candidate taking the exam in CO, if that makes a difference.

I don't think so, remember you are looking at your state website and its the AICPA who “knows” you took the test last week. No information, even the fact that you took the exam, has been exchanged betwewen the AICPA and your state board yet. I believe the only info I could see was the “there are no scores to display for this section” message.
