Does anyone know or can recommend a CPA or CPA resource where an actual person can mentor or answer questions? I’m asking because I had to turn away a few clients due to the complexity of their tax returns. However, I think if I had a seasoned CPA/mentor (paid or unpaid) to brainstorm my questions with, I would have been more comfortable keeping the work.

You have to know your skill level. Unless you already have someone like that or a family friend I doubt people in the business would want to help you get clients either they could get or ones they wouldn't even accept.

So good luck finding a family friend or teacher from your university that cares about former students.
