I’m about to test the waters. How do you go about doing interviews when you are in public? Simply say you have a doctors appointment? I don’t know how many times I could get away with that lol.

I never made anything up to go on interviews. I either said I had an appointment (none of their business what type of appointment, don't need to say doctor) or requested interviews after 5 or during lunch if local.

We all lie about going on job interviews, and when you become a manager you get lied to when your staff goes on interviews. Whatever lie works best in the moment.

Having said that, be careful choosing which interviews to pursue. It seems like “when it rains, it pours” when it comes to interviews. You can go weeks without a call back and then everyone wants to meet you in the same week. Keep in mind that every time you accept an interview, you are also often accepting 2nd and 3rd interviews. Getting through weeks of multiple interviews can make asking for time off extremely awkward. I always run out of excuses.
